Our products may not be suitable for everyone. Our sauces have been prepared according to very traditional recipes rooted in homemade traditional Italian cuisine. Unless you have eaten in a rustic trattoria in Italy (not a touristic one) or have been a guest in a traditional Italian family, chances are, you have never tasted anything like this before even though you have sampled multiple Italian dishes around the world. Our products cannot be compared to the pasta sauces found in supermarkets nor those found in your local Italian restaurant as those have been adapted to reduce costs and to appeal to the masses. I am not a chef and i do not cook as a profession, i cook purely out of passion. The passion to bring a taste of authenticity and tradition to those far from home or for those looking to relive memories of their childhood. My goal is to make these ancient recipes and methods survive for as long as possible and to prevail through this era of super-processed and premade food. It didn’t come easily, as my first meal with my in-laws resulted in me vomiting after having tasted these flavors for the first time. I learned over the next 20 years what it took to prepare these dishes, how to prepare these dishes and finally, I became the first foreigner in the family to be a worthy heir of these traditions. These recipes have been handed down through generations, from mother to daughter and if not perfectly executed, the whole family would refuse to eat it. I finally passed this harsh test once I was able to please all my very traditional Italian relatives by cooking for them during holiday banquets and events. These are precisely the recipes used when making our sauces. The only adaption made is to ensure the original taste whilst using local ingredients. It is well known that the Italian traditional cuisine is all about exalting the freshness of the ingredients, trying to interfere as little as possible with what mother nature has embedded in our food. I am obsessed in researching the best ingredients to achieve the perfect taste and healthy lifestyle.

1 thing I can assure you is that my recipes are very healthy, this is because I care so much about wellbeing that I make extensive research on the produce used to ensure that I am eating super-healthy.

The fish used in the bluefin tune sauce has been caught just moments before it is used for cooking. It must be a wild, local catch and must not weigh more than 2 kilos. In 2019, it was discovered that the fish in Thailand contain very low levels of mercury naturally, this combined with the fact that the fish has not had a lot of time to absorb the pollution in the sea is what makes this choice so healthy. Therefore, if my fisherman does not catch any tuna, unfortunately there wont be any sauce that day. 

The meat used in our sauces are sourced from farms which I know personally and visit regularly. I only choose grass-fed local animals from farms that support the zero-kilometer policy which reduces the environmental impact of the farm. I also regularly check the composition of the meat from these animals, ensuring they are always below 1% fat and due to them being grass-fed, the omega 6 – 3 ratio is within the range that decreasing bad cholesterol in the blood. 

Another important ingredient in these recipes is the oil. There is no use of seed oils or hydrogenated fats, I exclusively use Italian extra virgin olive oil. If the recipe requires butter, then it must come from grass-fed grazing cows as this is essential for the omega 6 – 3 ratio.

The most important ingredient in Italian food is authentic and succulent tomatoes. I import mine from a small supplier located at the base of the volcano, Vesuvius. Our Italian family are originally from this area. These tomatoes are high in minerals and are still processed organically in the same way our family has been doing for up to 1 generation ago. If we spend time in Italy around September, we normally do our own “conserva”.

The salt used in these sauces has also been well selected. I only use Malva sea salt that has no added iodine. This is the purest and healthiest, although hardest salt to find. As for the cured meats, I cure them myself as to be sure that there are no artificial flavorings or chemicals added during the process. The rest of the herbs and vegetables are all locally grown and free from artificial flavorings, flavor enhancers and preservatives. There will also never be MSG present in my recipes.
