BLUEFIN TUNA & TOMATO
A seasonal hidden gem, not often found in restaurants. This sauce is simple and delicate yet very tasty, if the right ingredients are available, it is also very healthy. The quality of tuna required for this simple sauce is difficult to come across in Italy hence it is not commonly found on any traditional menu. Having found a reliable source of bluefin tuna in Thailand, recreating the taste and delicacy of this Mediterranean fish-sauce is no issue. The meat of this fish is extremely flavorful and strongly complements the freshness of the Italian tomatoes we import from an area surrounding the Vesuvius. Extra virgin olive oil and iodine-free malva salt are the last ingredients required to complete a pasta sauce that recalls the summer on the Positano Riviera.
