ARRABBIATA
Another Italian sauce that requires no introduction. Arrabbiata has become so popular that its true origination has been forgotten and it is no longer known as a “poor” and common dish originally found in the south of Italy. It is now said to have derived from Lazio, in the region of Rome, however, it was the migration of people from Calabria that brought this sauce to Lazio. Calabria is known for their regular use of chilies and strong spices in their dishes and since our family has descendants from this province, we have maintained a lot of the original taste from this recipe, as opposed to the more internationalized version from Lazio. It is a vegetarian sauce infused with many spices and aromas which underline and exalt the perfectly ripe tomatoes that we import from the slopes of the Vesuvius. The sauce relies predominantly on tomatoes and therefore it is imperative that the correct ones are used. The kick that this sauce entails makes it a favorite amongst my Thai friends and family members. It is suitable for vegans, vegetarians and contains no MSG.
